Job Description

As the Director of Food & Beverage, you will hold a key role within the resort’s management, representing the Food & Beverage Division in the Executive Committee. Reporting directly to the General Manager, you will bring to life the Fairmont Food and Beverage philosophy across all dining areas, including restaurants, bars, lounges, in-room dining, private dining, banqueting, pools, and the beach.

Your leadership role involves managing the Food & Beverage Division, ensuring compliance with brand standards, corporate and functional strategies, local laws and regulations, and industry-best practices. This aligns with the long-term vision for the resort, aspiring to be one of Europe’s premier destination resorts.

Responsibilities:
You will design a guest journey that caters to the unique and evolving needs of Fairmont guests. As a dedicated representative of the Fairmont brand, you will integrate the strategic pillars into every guest interaction, consistently embodying Fairmont’s service philosophy in day-to-day operations. It is imperative that all service signatures are maintained, and the brands service behaviors are woven into the fabric of the service delivery on the premises.
Your responsibility extends to bringing to life the distinctive concepts of each of the resort’s dining establishments. You will craft inventive, immersive, and reimagined dining experiences, incorporating storytelling that mirrors the individual identities of each venue at the core of your efforts. Your focus will be on ensuring a seamless and intuitive service that guides guests through a culinary exploration, enhancing their dining experiences from breakfast through to dinner.
You will implement a curated artisanal beverage offering for the resort, including premium non-alcoholic beverages, a well-balanced choice of local and international beers, a benchmark wine and champagne selection, a library of the world’s finest coffees and teas, as well as rare quality cocktails and top-shelf spirits at its bars.
Your role includes delivering in-room dining experiences that bring the restaurant to the guestroom through place settings and table-side preparations, and executing an industry-leading amenity program. Additionally, you will define the resort’s minibar offering, welcome and departure tastes, and the selection of fine tobacco available for sale. Collaborating with the Executive Chef, you will design bespoke private and destination dining experiences anywhere in the resort, fully catering to guests on their terms.
For meetings, conferences, weddings, or anything in-between, your role will involve developing unique programming that goes beyond the baseline, catering to a variety of occasions. You will coordinate customized decorations and set-ups in both the resort’s indoor and outdoor facilities, aiming to impress guests with unparalleled service quality and flawless execution. Taking on the responsibility, you will also oversee food and beverage service aboard the resort’s catamaran, designing tailor-made on-board experiences for both group and private charters.
Around the pools and at the beach, your team will provide discreet, and anticipatory service, including food, beverages, sun essentials and a range of other thoughtful complimentaries. At the water sports pavilion your team will provide expert guidance and instructions to water sports enthusiasts and beginners.
You will be responsible for the resort’s entertainment programming and maintain a pool of musicians and other performing artists to bring to life the resort’s day-to-evening ritual, calendar of live music acts, and special programming for the festive season.
Leads by example on the principles of ‘Heartist’ and the Accor Values. Supports the on-going development and evolution of Heartist culture within Fairmont La Hacienda.
Prepares departmental strategies, establishes effective goals, measurements and action plans for the department related to: Colleague Engagement, Guest Satisfaction, Leading Quality Assurance, ALL Loyalty program and Financial results.
Supports Accor`s and the Brand`s commitment to exceptional guest experience through the delivery of “Augmented hospitality” – a refined vision of hospitality and the tailor-made services Fairmont La Hacienda provides to its guests and visitors.
Supports Accor`s commitment to Corporate Social Responsibility (CSR) through the co-ordination of strategic CSR activities at Fairmont La Hacienda. Communicates and encourages the participation in CSR activities of all team members.
Ensures adherence to and reinforces all statutory and legal requirements concerning fire safety, hygiene, health and safety, GDPR, and employment legislation.
Manages and oversees the activities of all colleagues across departments to guarantee the seamless operation of daily tasks, including mise-en-place, sequence of service, and breakdown/set-up procedures. Ensures that the team actively creates Sparkle moments that are based on personalization and creativity and promotes those.
Takes responsibility for guest experiences that have negatively been impacted and turns them into memorable moments.
Ensure your team display an attitude of anticipative and caring service at all times during your shift.
Conduct daily team briefings ensuring full transparency on hotel operations and detailed updates on service standards and product knowledge.
Ensure sufficient labor # are planned to meet the needs of the business and in accordance with occupancy and special events and budget.
Adapts an entrepreneurial approach by; continuously seeking out areas for improvement and addressing those through innovative solutions, by initiating and leading change, and by actively looking for opportunities to generate revenue across the resort.
Constantly monitors and is aware of the latest industry trends, new and innovative products and service opportunities. Presents implementation plan of such when applicable.
Participates in the annual budget preparation processes related to the department.
Manages departmental Profit & Loss by controlling departmental expenses and by generating extra revenue.
Prepares departmental strategies, establishes effective goals, measurements and action plans for the department related to: Colleague Engagement, Guest Satisfaction, Leading Quality Assurance, ALL Loyalty program and financial results.
Effectively manages selection and recruitment, for all positions within the department in line with Accor`s Leadership Capability Framework, Recruitment Charter and related processes.
Coordinate trainings with F&B leaders for food & beverage colleagues when required.
Oversees the 90-day onboarding program to ensure new employees feel welcome and team members are prepared for the new arrival including management within the internal communication network.
Develops a strong team through consistent effective leadership, training, operational management, and succession planning.
Fosters a winning, solution-oriented work environment, motivating and engaging colleagues to continuously deliver the best possible service to our guests.
Promotes an environment of open ongoing feedback and coaching to breach gaps for better performance.

Qualifications
Possession of a Bachelors degree in Hotel/Hospitality Management is a prerequisite.
Previous experience as a Director of Food and Beverage, with a minimum of 3 years in distinguished European luxury hotels, is mandatory.
